I wanted to wish everyone a wonderful holiday tomorrow!  Jim and I have much to be thankful for, we’ve had an exceptionally good year and remain in good health, despite the economy and age creeping up on us.  Jim turned fifty this year, and we are now eligible for AARP… LOL  I’m still having trouble wrapping my brain around that one!

I finished Jim’s bathrobe this morning, made a couple of pie crusts and turned one of them into pumpkin pie for tomorrow, the other I’ll freeze for later.  After the pie was done I made cranberry chutney, and thought I’d share the recipe with you as it’s a super yummy one!

Cranberry Chutney

  • 1 cup water
  • 3/4 cup white sugar
  • 1 (12 ounce) package fresh cranberries
  • 1 cup apples – peeled, cored and diced
  • 1/4 cup cider vinegar
  • 1/4 cup sherry
  • 3/4 cup golden raisins
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground cloves

In a medium saucepan combine the water and sugar. Bring mixture to a boil over medium heat. Add the cranberries, apples, sherry, cider vinegar, raisins and spices. Bring to a boil, then simmer gently for 10 minutes stirring often.

Pour mixture into a mixing bowl. Place plastic wrap directly on the surface of the sauce. Cool to room temperature and serve or cover and refrigerate. Bring chutney to room temperature before serving.

I managed to find a 9lb turkey!  Perfect for two people without a ton of leftovers. Jim put in a request for turkey, gravy, stuffing, rolls, chutney and broccoli with cheese sauce.  And here I thought I was going to get off easy! :)

I have a tip.  If you happen to own a dehydrator, you can cube up all your bread, and the dehydrator will turn it into perfect, thoroughly dried cubes (like the packaged ones) in about an hour.

    Think I cooked an 8 pound bird last year. When done it looked like a long legged chicken!
    Thanks for the tip on the dehydrator, I just pulled mine out to dry the biscuits and cornbread. Picked some fresh sage for the dressing, then rosemary and thyme for the turkey brine. Eggs are boiled, sweet potatoes are in the oven and I have Christmas music playing.

    Hmmmmm, which pie do I want for breakfast – pumpkin, apple, vanilla cream, banana cream or chocolate cream?
