Potato bombs tonight!
Jim and I stopped at the grocery store for some whopper baking potatoes so we could have “potato bombs” with dinner tonight. We cored them out with an apple corer, and stuff them with whatever, tonight it happened to simply be onion and cheddar cheese, wrapped in bacon.
We wrap them in foil and toss them on the Big Green Egg, and the flavor is really fabulous!
There was a couple of Cornish hens in the freezer, so I thawed them out and stuffed them with onion, garlic, rosemary and lemon. We’ll have one for dinner tonight and snack on the other tomorrow.
The weather was incredible today, seventy degrees! It rained all night and will turn cold tonight. We went up and did some walking on the land yesterday, as well as some shooting! It rained on us, but it was worth it to just be up there in the peace and quiet.





70 sounds nice. We’re still trying to dig out from 32″ of snow & very cold night temps. Tomorrow they’re predicting rain on top of the snow. Will probably see roof collapses. Good news is that we didn’t lose power. Thank heaven for our wood stove.
Diane, that was just an amazing amount of snow you guys got up there! We saw 39 inches in areas! Yes, thank heavens indeed for wood heat! Here’s wishing you all the best up there that no roofs collapse, that would be AWFUL!
we went for a walk at the lake and it was about 65 when we were there then at home I worked in the yard at 63 degrees – so nice – have a good trip back to New Orleans I assume you aren’t home for long?

Headed back tomorrow afternoon after our annual termite inspection Karen. We were hoping to get the orchard pruned today and spray the trees with dormant oil, but it looks like it’s going to rain again all day. We couldn’t do it yesterday as we had a water line leaking and had to dig it up and fix it.
The weather was wonderful today. And boy, reading the description of your food sounds heavenly. I’ll have to try that sometimes. Larry makes a good Cornish Hen on the rotisserie. We’ll have to try stuffing them the next time.

I love the flavor of the rosemary and veggies that permeates through the hens Vivian, it’s so much more pronounced on the small game hens than it is on a full sized chicken.
I do believe I am now hungry. What the heck is wrong with you, CJ? Posting delicious goodies like this is just wrong! Okay, to feel better I’ll get a handful of M&Ms out of the freezer.

We bought a Primo which is very much like the BGE. We are still learning. I look forward to trying your potato bombs. Care to share what your cook temp and times were? Your food always looks amazing. So, I freely admit I plan to steal some of your ideas/recipes if I can! No point in reinventing the wheel.

Mary, the big oval Primo was the grill I wanted! But Jim thought the round egg would be better… sigh. I know that oval is a better shape!
Since I was doing the potatoes with the cornish hens, I kept the egg at 375 degrees for an hour, then bumped it to 450 for about 15 minutes more. You can really do potatoes at any temperature, but the higher end heat makes the bacon inside the tinfoil nice and crispy… the bacon and the skin is my favorite part!
Sigh….just came back to computer and realized that your picture shows you did the coring across the potato and not length wise. That would have been SOOOO much easier! LOL

We used a drill! Crosswise is super easy with an apple corer, plus you can have more holes to stuff!
